Instructions
Season the beef strips with salt and pepper.
Add olive oil to a pan, and heat over medium heat.
Add the beef strips and sear until browned.
Remove from pan and set aside.
Add olive oil to the pan, then sauté the onion & garlic until fragrant.
Add the mushrooms to the pan , and stir till the mushrooms are cooked.
In a bowl, mix the flour into the vegetable broth.
Add to the pan, scrapping the browned bits.
Add the Dijon mustard and the yogurt, mixing well.
Simmer over low heat, stirring occasionally.
Return the beef back to the pan, stirring well.
Serve with egg noodles for the best taste.
Notes
Calorie count/ serving not including the egg noodles.
You can replace part of the broth with white wine, if you want.
