Ingredients

Base salad

  • 150 g Arugula or watercress
  • 2 Large beetroots
  • 1 Green apple thinly sliced
  • 1 Pear thinly sliced
  • 1 Small orange cubed
  • 50 g Goat cheese
  • 1/4 cup Walnuts

The dressing

  • 3 tbsp Pomegranate molasses
  • 1 tbsp Balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Extra virgin olive oil
  • Salt
  • Pepper

Instructions

  • In a serving plate, create a bed of the arugula or watercress.
  • Then add the roasted beetroots, green apple, pear, orange, crumbled Goat cheese, walnuts.
  • In a bowl, mix the dressing ingredients. Set aside.
    Finally drizzle the dressing.
  • Serve & enjoy.
