Ingredients

The Salad

  • 100 g Arugula
  • 1 Clementine
  • 1 Beetroot
  • 1 Onion thinly sliced
  • 1/4 cup Walnuts chopped

The Dressing

  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Pomegranate molasses
  • 1 tbsp Olive oil
  • 1 tbsp Honey
  • 1 tsp Dijon mustard
  • Salt
  • Pepper

Instructions

  • Roast beetroot in Airfryer or oven.

The Dressing

  • In a small jar, add the dressing ingredients & shake well till incorporated.

Assembling the Salad

  • In a bowl, add the arugula, roasted beetroots, onion & clementine.
  • Add the chopped walnuts into the salad.
  • Pour the dressing over the salad.
  • Serve & enjoy.
