Slice the eggplants, tomatoes, zucchini, bell peppers, and onions into thin rounds and set aside.
In a sauce pan, add the Tomato paste, grated tomatoes, water, garlic, salt, pepper, oregano, basil, and thyme. Bring to boil on a low flame. Spread tomato sauce into the bottom of a baking dish.
Preheat the oven to 200°C.Arrange alternating slices of tomatoes, eggplants, zucchini, bell peppers, and onions starting at the outer edge of the dish and working towards the center. Voila!!
Prepare the herb seasoning by mixing all ingredients, and brush the vegetables with the seasoning using a pastry brush.
Bake in the preheated oven with Aluminum foil on top for 30 minutes.
Uncover, then bake for further 15 minutes till the vegetables are golden on the edges.
& Finally!! Serve on its own, or with bread, rice, quinoa.
