Ingredients

Ratatouille sliced Vegetables

  • 4 Eggplants
  • 4 Tomatoes
  • 4 Zucchini
  • 4 Bell peppers (green, yellow and red)
  • 2 Onions

Ratatouille tomato sauce

  • 1 tbsp Tomato paste
  • 2 Tomatoes grated
  • 1 Cup Water
  • 1 Clove Garlic minced
  • Salt
  • Pepper
  • Oregano
  • Basil
  • Thyme

Ratatouille herb seasoning

  • 2 Tbsp Olive oil
  • 1 Clove Garlic minced
  • Thyme

Instructions

  • Slice the eggplants, tomatoes, zucchini, bell peppers, and onions into thin rounds and set aside.

  • In a sauce pan, add the Tomato paste, grated tomatoes, water, garlic, salt, pepper, oregano, basil, and thyme. Bring to boil on a low flame. Spread tomato sauce into the bottom of a baking dish.

  • Preheat the oven to 200°C.
    Arrange alternating slices of tomatoes, eggplants, zucchini, bell peppers, and onions starting at the outer edge of the dish and working towards the center.

  • Prepare the herb seasoning by mixing all ingredients, and brush the vegetables with the seasoning using a pastry brush.

  • Bake in the preheated oven with Aluminum foil on top for 30 minutes.

  • Uncover, then bake for further 15 minutes till the vegetables are golden on the edges.
