Preheat oven to 200°C.Place each potato between two wooden spoons. Slice the potato into thin slices, the spoons will prevent you from cutting all the way through.Place the potatoes on a baking sheet lined with parchment paper.
In a bowl, Whisk together the olive oil, minced garlic, salt, pepper, rosemary, oregano, thyme, and basil.
Brush each of the sliced potatoes with a generous amount of the mixture. Make sure to brush in between the slices.
Sprinkle with parmesan and place in oven until potatoes are tender and golden brown.Serve and enjoy!
