Rinse the bulgur wheat until the water runs clear. Then in a bowl, add the bulgur and the boiled water, and leave it covered for 10 minutes to cook. Drain very well. Set aside to cool.
Preheat a non stick grill pan and add to it the olive oil over medium heat.Grill the cheese for around 2 minutes per side until golden brown. Remove the cheese.
The Dressing
In a bowl, whisk all the dressing ingredients together until smooth.
Assembling the Salad
Prepare the rest of your ingredients.
On a plate, Start arranging the arugula leaves. Then, add the bulgur, and the haloumi cheese.Top with the cherry tomatoes, pomegranate seeds, chickpeas and walnuts. Finally, Drizzle with the dressing.Serve and enjoy!
