Ingredients

  • cup Wholemeal flour + more for dusting
  • ½ cup Butter
  • ¾ cup Brown sugar
  • 1 Egg
  • 1 tsp Baking powder
  • ½ cup Orange juice
  • 1 tsp Orange zest finely grated
  • tsp Salt
  • Vanilla

Instructions

  • Using a handheld or stand mixer, beat the butter and sugar together on high speed until smooth and creamy.

  • Beat in the egg and vanilla extract on high speed until combined.

  • Add the orange juice and orange zest then mix again.

  • In a separate bowl, mix the flour, baking powder and salt together.

  • Mix the liquid ingredients with the flour mix and mix slowly to combine thoroughly to form a ball.

  • Preheat oven to 200°C.
    Turn the dough out onto a lightly floured surface and roll with a regular rolling pin.

  • Firmly press the embossed rolling pin into the already-rolled dough. Use long stroke to preserve the design.

  • Once overall design is created, use cookie cutter to cut out desired shape.

  • Place the biscuits on a baking sheet lined with parchment paper.

  • Bake in oven for 20-30 minutes or until edges of the cookie are slightly darker. Leave to cool.
