Using a handheld or stand mixer, beat the butter and sugar together on high speed until smooth and creamy.
Beat in the egg and vanilla extract on high speed until combined.
Add the orange juice and orange zest then mix again.
In a separate bowl, mix the flour, baking powder and salt together.
Mix the liquid ingredients with the flour mix and mix slowly to combine thoroughly to form a ball.
Preheat oven to 200°C.Turn the dough out onto a lightly floured surface and roll with a regular rolling pin. Firmly press the embossed rolling pin into the already-rolled dough. Use long stroke to preserve the design.
Once overall design is created, use cookie cutter to cut out desired shape.
Place the biscuits on a baking sheet lined with parchment paper.
Bake in oven for 20-30 minutes or until edges of the cookie are slightly darker. Leave to cool.
