Ingredients

  • 4 Potatoes
  • 1 tsp Olive oil
  • Salt
  • Pepper

Soy Sauce (Optional)

  • 1 cup Water
  • 1 tbsp Cornstarch
  • 4 tbsp Light Soy sauce
  • Salt
  • Pepper

Instructions

  • Boil potatoes in a large pot filled with cold water and a teaspoon of salt till they are fork-tender.
  • Preheat oven to 200°C.
    Using a potato ricer, mash the potatoes.
  • Add salt and pepper to taste.
  • Using a piping bag, pipe the potatoes onto a parchment sheet.
  • Brush the potatoes with olive oil, and place in the preheated oven.
  • Bake in the preheated oven, till the duchess potatoes are golden brown.

Soy Sauce

  • Heat water in a small pan, till just warm.
  • Add cornstarch to the water, and mix vigorously till you get a smooth thick paste.
  • Add soy sauce, salt and pepper, and stir well. Set aside.
  • Serve the duchess potato with soy sauce (optional) as a side dish.
