Instructions
Boil potatoes in a large pot filled with cold water and a teaspoon of salt till they are fork-tender.
Preheat oven to 200°C.
Using a potato ricer, mash the potatoes.
Add salt and pepper to taste.
Using a piping bag, pipe the potatoes onto a parchment sheet.
Brush the potatoes with olive oil, and place in the preheated oven.
Bake in the preheated oven, till the duchess potatoes are golden brown.
Soy Sauce
Heat water in a small pan, till just warm.
Add cornstarch to the water, and mix vigorously till you get a smooth thick paste.
Add soy sauce, salt and pepper, and stir well. Set aside.
Serve the duchess potato with soy sauce (optional) as a side dish.
