High Protein Coleslaw (Mayo-free)

Ingredients

  • ½ Medium Cabbage
  • 1 Carrot
  • 200 g Low fat Greek yogurt
  • 1 tbsp Apple cider Vinegar
  • 2 tsp Honey
  • ½ tbsp Lemon juice
  • Salt
  • Pepper

Instructions

  • Start by shredding the cabbage finely, either by a knife, mandoline or a food processor.
  • Grate the carrot using a grater.
  • To prepare the dressing, in a small bowl, add Greek yogurt, vinegar, honey, salt & pepper. Whisk well until well combined.
  • In a large bowl, add the grated cabbage and carrot. Then add the dressing.
    Mix well.
  • Serve and enjoy.
