Add little salt to the eggplant slices, and strain for 10 minutes in a colander. This step is necessary to drain the eggplants.
Chicken breasts
Marinate chicken breasts with salt and pepper.
Tomato sauce
In a saucepan, add the grated tomatoes, tomato paste. sprinkle with salt, pepper, rosemary, basil, thyme and oregano. Cook on low heat until simmering.
Assembling
Spread the eggplant slices onto a parchment sheet, and sprinkle with pepper.
Preheat oven to 200°C.Cover the eggplant slices with the tomato sauce.
Add the chicken slices on top.
Sprinkle each eggplant bite with the shredded cheese mix.Finally top with the chopped olives.
Bake in preheated oven until cheese is golden brown (around 30 minutes).Serve and enjoy!
