Prepare your ingredients.Start by preparing the tahini sauce by combining all ingredients. If it is too thick, add more water as needed. To prepare the filling, add ¾ of the tahini sauce in a bowl. Then add the quinoa, olives and tomato. Mix well.
Using your fingers or a small spoon start filling the hollow veggies.
In a pot, add the stuffed veggies upright. Prepare the sauce by mixing the crushed tomatoes with the remaining ¼ of the tahini sauce. Add the mixture onto the pot.
Cook until done.Serve and enjoy.
