Start by rinsing your quinoa thoroughly in a fine mesh strainer under running water. This step is necessary to remove the bitter tasting saponin from quinoa.
In a saucepan, heat the olive oil. Then add the quinoa and toast over medium heat. Stir Constantly till the quinoa is golden brown and smells nutty.
Add the boiled water to the saucepan. Cook uncovered on medium heat till all the water is absorbed, for about 15 minutes.
Remove the pot from heat, cover and let stand for 5 minutes. Quinoa is done when the tiny spiral (the germ) separates and curls around the seed.Enjoy quinoa in salads or soups.
