Easy Mediterranean Heart-healthy Grilled Halloumi Bulgur Salad
This Mediterranean salad is packed with all the goodies. Light and fluffy bulgur is studded with perfectly grilled Halloumi, tomatoes, arugula, chickpeas, pomegranate seeds and walnuts. Then, it is drizzled with a lip-smacking pomegranate dressing which gives the salad an extra kick. The combination is absolutely delicious and makes for a satisfying light main course.
Easy Mediterranean Heart-healthy Grilled Halloumi Bulgur Salad

Materials
Salad
- 1 cup Fine wheat bulgur
- 1 cup Boiled water
- 250 g Low fat Haloumi cheese thickly sliced
- 10 Cherry tomatoes halved
- ½ cup Pomegranate seeds
- ½ cup Chickpeas
- Arugula
- ½ cup Whole walnuts
Dressing
- 3 tbsp Pomegranate Molasses
- 1 tbsp Olive oil
- 1 tsp Dijon mustard
- 1 tbsp Lime juice
- Salt
- Pepper
Instructions
The Salad
- Rinse the bulgur wheat until the water runs clear. Then in a bowl, add the bulgur and the boiled water, and leave it covered for 10 minutes to cook. Drain very well. Set aside to cool.
- Preheat a non stick grill pan and add to it the olive oil over medium heat.Grill the cheese for around 2 minutes per side until golden brown. Remove the cheese.
The Dressing
- In a bowl, whisk all the dressing ingredients together until smooth.
Assembling the Salad
- Prepare the rest of your ingredients.
- On a plate, Start arranging the arugula leaves. Then, add the bulgur, and the haloumi cheese.Top with the cherry tomatoes, pomegranate seeds, chickpeas and walnuts. Finally, Drizzle with the dressing.Serve and enjoy!
