Mini Delish Swedish Cinnamon Buns (Kanelbullar)

Anyone who has been to Sweden, or has even been to Ikea knows about Kanelbullar (Cinnamon buns). In Sweden, the cinnamon smell of these buns just fills every supermarket or café, and are a popular part of every Swedish Fika.
The Swedes love this bun that they celebrate the national cinnamon bun day “Kanelbullen dag” on the 4th of October.
These buns are quite different from their American counterparts in the shape, topping and even the dough. The Swedish bun dough typically contains cardamom, shaped into a knot and finally topped with pearled sugar rather than icing.
I prepared a lighter healthier version with a few simple swaps. Enjoy it guilt-free with your favorite hot drink! ☕️
Mini Delish Swedish Cinnamon Buns (Kanelbullar)

Materials
Dough
- 3¼ cup Wholemeal flour
- 1 cup Skimmed milk warm
- ⅛ cup Brown sugar
- ¼ cup Butter Softened
- 2¼ tsp Yeast
- 1 tsp Cardamom ground
- ⅛ tsp Salt
Filling
- ⅛ Cup Butter softened
- ¼ Cup Brown sugar
- 1 Tbsp Cinnamon
Topping
- 1 Egg whisked with 1 tsp water
- Brown sugar or Pearled sugar
Instructions
Preparing the dough
- Prepare your ingredients.
- In a bowl mix the warm milk with sugar.
- Mix yeast with warm milk and set aside until foamy.
- Add the butter to the yeast mixture.In another bowl, mix the flour, cardamom and salt together.
- Add the dry ingredients into the wet ingredients and mix using a spatula.
- Continue kneading the dough with your hand or with a mixer till you get a smooth dough.Shape the dough into a ball and place in a bowl.
- Cover the bowl with a clean kitchen towel and set aside in a warm place for 30 minutes.
Preparing the filling.
- Meanwhile, prepare the filling ingredients.
- Combine all the ingredients in a bowl, and mix thoroughly.Set aside till the dough is ready.
Forming the buns
- Transfer the dough onto a silicon mat.
- Using a rolling pin, flatten the dough into a rectangle.
- Spread the filling evenly on top.
- Fold the dough.
- Cut into slices of about 2cm.
- Take a slice and twist it. Then fold it into a knot tucking the end underneath.
- Cover the buns and leave until doubled in size (around 60minutes)
Baking the buns
- Preheat the oven to 200°C.Brush each of the rolls with the egg wash. Sprinkle with brown sugar or preferably pearled sugar (if having).
- Bake for 15-20 minutes until they are golden brown.Transfer to a cooling rack for 5minutes.Serve warm and enjoy with your favorite hot drink.
