Colorful Beetroot Clementine Salad
This easy arugula, beetroot & clementine salad is packed with nutrients & is full of flavours & textures. This amazing combination is further paired with a honey balsamic vinaigrette that takes the salad into the next level. This salad is absolutely the perfect choice for your winter holidays.
Colorful Beetroot Clementine Salad

Materials
The Salad
- 100 g Arugula
- 1 Clementine
- 1 Beetroot
- 1 Onion thinly sliced
- 1/4 cup Walnuts chopped
The Dressing
- 2 tbsp Balsamic Vinegar
- 1 tbsp Pomegranate molasses
- 1 tbsp Olive oil
- 1 tbsp Honey
- 1 tsp Dijon mustard
- Salt
- Pepper
Instructions
- Roast beetroot in Airfryer or oven.
The Dressing
- In a small jar, add the dressing ingredients & shake well till incorporated.
Assembling the Salad
- In a bowl, add the arugula, roasted beetroots, onion & clementine.
- Add the chopped walnuts into the salad.
- Pour the dressing over the salad.
- Serve & enjoy.
