Healthier Creamy Beef Stroganoff
Beef Stroganoff is originally a Russian dish of tender small pieces of beef, that are sautéed in a creamy mushroom sauce. It is typically served with egg noodles, & in my opinion they are a perfect match.
That is a healthier/ lighter version of the classic beef stroganoff prepared with simple swaps but without any sacrifice of taste.
Healthier Creamy Beef Stroganoff

Materials
- 500 g Beef Sirloin or Tenderloin thinly sliced
- 1 tsp Olive oil
- 1 Onion finely chopped
- 2 Garlic cloves minced
- 200 g Mushrooms sliced
- 2 cup Vegetable broth
- 2 tbsp Wholmeal flour
- 1 tbsp Dijon mustard
- 170 g Light Greek yogurt
- Salt
- Pepper
- Egg noodles optional
Instructions
- Season the beef strips with salt and pepper.
- Add olive oil to a pan, and heat over medium heat.Add the beef strips and sear until browned.Remove from pan and set aside.
- Add olive oil to the pan, then sauté the onion & garlic until fragrant. Add the mushrooms to the pan , and stir till the mushrooms are cooked.
- In a bowl, mix the flour into the vegetable broth. Add to the pan, scrapping the browned bits.
- Add the Dijon mustard and the yogurt, mixing well.Simmer over low heat, stirring occasionally.
- Return the beef back to the pan, stirring well.
- Serve with egg noodles for the best taste.
Notes
- Calorie count/ serving not including the egg noodles.
- You can replace part of the broth with white wine, if you want.
