The Best Skinny Homemade Chicken Ceasar Salad in Tortilla Bowl

Who doesn’t love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.

Toss with the crisp lettuce, drizzle with the guilt-free flavorful dressing and finally top with croutons and cheese for the perfect main course!

Materials

Salad

  • 1 Medium Iceberg lettuce shredded
  • 200 g Cherry tomatoes sliced
  • 25 g Low fat white Cheddar cheese grated
  • 25 g Parmigiano Reggiano cheese grated

Chicken Breasts

  • 500 g Chicken Breasts
  • tsp Olive oil
  • Salt
  • Pepper

Dressing

  • 150 g 0% fat Greek yogurt
  • ½ tsp Light mayonaise
  • ½ tsp Dijon mustard
  • 25 g Anchovies fillets
  • 1 tsp Capers
  • 2 tbsp Olive oil
  • 1 tsp Apple vinegar
  • 1 clove Garlic
  • Jalapeno slices optional
  • Salt and Pepper if needed

Croutons

  • 4 slices Wholemeal toast cut into cubes
  • ¼ cup Olive oil
  • 1 clove Garlic minced
  • Salt
  • Pepper
  • Basil
  • Thyme

Tortilla Bowls

  • 2 Wholemeal tortilla bowls
  • tsp Olive oil

Instructions

Preparing the Croutons

  • Preheat oven to 200°C.
    In a small bowl, mix the olive oil, minced garlic, salt, pepper, basil and thyme.
    In another bowl, place the cut toast cubes.

  • Drizzle the olive oil mixture on top of the cubed toast. Mix well until bread is coated by all ingredients.

  • Spread the bread cubes onto a baking sheet lined with parchment paper.
    Bake in the preheated oven until golden.

Preparing the Tortilla Bowls

  • Brush oven-proof bowls with oil, then press each tortilla into a greased bowl.
    Dry beans or a small bowl pressed onto the molded tortillas will help keep them in place.
    Bake in the preheated oven until golden.

Preparing the Chicken Breasts

  • Marinate chicken with salt and pepper.
    Add oil to a grill pan. Place the chicken breasts on the hot grill pan. Cook on the first side and then flip over to cook on the other side. Cook chicken thoroughly until it is done.
    Set aside to cool, then cut into slices.

Preparing the Dressing

  • In a blender, add all the dressing ingredients except the jalapenos (if using). Blend until smooth and creamy.

  • Cut the Jalapeno slices into small pieces and mix into the dressing.

Assembling the Caesar Salad

  • Gather your ingredients.

  • Start by adding the shredded lettuce into the tortilla bowls.

  • Then add the sliced grilled chicken breasts.

  • Add the sliced cherry tomatoes.

  • Finally top with the croutons and sprinkle the grated Cheddar and Parmigiano Reggiano cheese.
    Drizzle with the Caesar dressing.
