Healthier Swedish Potato Dill Salad (Färskpotatis)

When I was in Sweden, the midsummer festival was the feast I was always looking for, especially that it comes after a long dark winter.
Swedes celebrate the midsummer wearing flower crowns and dancing around the maypole. They also enjoy several dishes for celebrating midsummer.
Among the popular Scandinavian dishes for celebrating midsummer is the “Färskpotatissallad”. This salad goes quite well as a BBQ side dish or even as a light lunch. The original recipe calls for mayonnaise and sour cream for the dressing. I made simple twists to prepare a healthier version.
Healthier Swedish Potato Dill Salad
This creamy potato salad is the perfect BBQ side dish, or light lunch. Enjoy it guilt-free!

Materials
Salad
- 500 g Potatoes
- 50 g Radishes chopped
- ½ cup Dill chopped
- 1 tsp Chives optional
Dressing
- 200 g Low fat Greek yogurt
- 1 tbsp Vinegar
- 1 tbsp Dijon mustard
- Salt and pepper
Instructions
- Start by boiling the potatoes in a pot for around 15minutes until tender.Meanwhile, prepare the dressing, by mixing all the ingredients well in a small bowl.
- Finally In a bowl, add the chopped potatoes, radish & dill.
- Add the dressing & mix well.
- Garnish with the chopped chives.Serve and enjoy!
