Low Carb Tasty Eggplant Chicken Pizza Bites
Low carb tasty pizza bites that use eggplant slices as a base instead of pizza dough. The eggplant bites are further topped with chicken and shredded cheese to provide a complete nutritional value. It is flavor packed, and quite easy to assemble.

Materials
- 2 Eggplants sliced
- ½ kg Chicken breasts thinly sliced
- 2 Tomatoes grated
- 1 tbsp Tomato paste
- ¼ cup Red Leicester cheese shredded
- ¼ cup Low fat cheddar cheese shredded
- ¼ cup Low fat Mozzarella shredded
- 10 Kalamata olives chopped
- oregano
- Basil
- Rosemary
- Thyme
- Salt
- Pepper
Instructions
Eggplant
- Add little salt to the eggplant slices, and strain for 10 minutes in a colander. This step is necessary to drain the eggplants.
Chicken breasts
- Marinate chicken breasts with salt and pepper.
Tomato sauce
- In a saucepan, add the grated tomatoes, tomato paste. sprinkle with salt, pepper, rosemary, basil, thyme and oregano. Cook on low heat until simmering.
Assembling
- Spread the eggplant slices onto a parchment sheet, and sprinkle with pepper.
- Preheat oven to 200°C.Cover the eggplant slices with the tomato sauce.
- Add the chicken slices on top.
- Sprinkle each eggplant bite with the shredded cheese mix.Finally top with the chopped olives.
- Bake in preheated oven until cheese is golden brown (around 30 minutes).Serve and enjoy!
