Skinniest Vegan Duchess potatoes
That is the skinniest version of duchess potatoes prepared with only one ingredient. It is vegan, gluten free, and fat-free. It can be served as a side dish with whatever you want.
Skinniest Vegan Duchess Potatoes

Materials
- 4 Potatoes
- 1 tsp Olive oil
- Salt
- Pepper
Soy Sauce (Optional)
- 1 cup Water
- 1 tbsp Cornstarch
- 4 tbsp Light Soy sauce
- Salt
- Pepper
Instructions
- Boil potatoes in a large pot filled with cold water and a teaspoon of salt till they are fork-tender.
- Preheat oven to 200°C.Using a potato ricer, mash the potatoes.
- Add salt and pepper to taste.
- Using a piping bag, pipe the potatoes onto a parchment sheet.
- Brush the potatoes with olive oil, and place in the preheated oven.
- Bake in the preheated oven, till the duchess potatoes are golden brown.
Soy Sauce
- Heat water in a small pan, till just warm.
- Add cornstarch to the water, and mix vigorously till you get a smooth thick paste.
- Add soy sauce, salt and pepper, and stir well. Set aside.
- Serve the duchess potato with soy sauce (optional) as a side dish.
