The Crunchiest Oven Fried Chicken Drumsticks (with two different coatings)
Who doesn‘t love fried chicken?! Can you imagine enjoying it guilt free? These baked drumsticks are just as crunchy as the fried ones, but without any extra fat or greasiness.
For coating the drumsticks, I experimented two variations: seasoned flour with corn starch & seasoned panko. They were family tested. Both were delicious and crunchy, but the panko was superior in providing more texture & crispiness. For marination, I did an overnight seasoned buttermilk brine, which did wonders in flavoring and tenderizing the chicken.
So the result was just perfect: crunchy and crispy on the outside, soft and tender on the inside 👌

For Marinating
- 1 kg Drumsticks
- 2 cup Light Buttermilk
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic
- 1 tsp Paprika
- Chilli
For the Seasoned Panko Breadcrumbs
- 1 cup Panko breadcrumbs
- 2 tbsp Parmesan cheese
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Basil
- Chilli
For the Seasoned Flour
- ¼ cup Wholemeal flour
- 1 tbsp Corn starch
- 2 tbsp Parmesan cheese
- 1 tsp salt
- 1 tsp Pepper
- 1 tsp Garlic
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Basil
- tsp Chilli
For Baking
- Canola cooking spray
Instructions
Marinate
- In a resealable plastic bag, add chicken drumsticks, buttermilk and spices. Refrigerate overnight.
Coat and bake
- Preheat oven to 200°C.In one plastic bag, Combine flour and seasoning. In another plastic bag, combine the panko breadcrumbs and seasoning.
- Remove chicken from the buttermilk and dredge each piece in the seasoned flour or the seasoned panko breadcrumbs, depending on what you choose. Shake off any excess.
- Transfer onto a prepared wire rack sitting atop a baking sheet. Spray the drumsticks with canola oil spray.
- Bake until chicken drumsticks are golden and cooked through, flipping in between.Serve immediately, and enjoy!
