Materials
Ratatouille sliced Vegetables
- 4 Eggplants
- 4 Tomatoes
- 4 Zucchini
- 4 Bell peppers (green, yellow and red)
- 2 Onions
Ratatouille tomato sauce
- 1 tbsp Tomato paste
- 2 Tomatoes grated
- 1 Cup Water
- 1 Clove Garlic minced
- Salt
- Pepper
- Oregano
- Basil
- Thyme
Ratatouille herb seasoning
- 2 Tbsp Olive oil
- 1 Clove Garlic minced
- Thyme
Instructions
- Slice the eggplants, tomatoes, zucchini, bell peppers, and onions into thin rounds and set aside.
- In a sauce pan, add the Tomato paste, grated tomatoes, water, garlic, salt, pepper, oregano, basil, and thyme. Bring to boil on a low flame. Spread tomato sauce into the bottom of a baking dish.
- Preheat the oven to 200°C.Arrange alternating slices of tomatoes, eggplants, zucchini, bell peppers, and onions starting at the outer edge of the dish and working towards the center.
- Voila!!
- Prepare the herb seasoning by mixing all ingredients, and brush the vegetables with the seasoning using a pastry brush.
- Bake in the preheated oven with Aluminum foil on top for 30 minutes.
- Uncover, then bake for further 15 minutes till the vegetables are golden on the edges.
- & Finally!! Serve on its own, or with bread, rice, quinoa.
