Materials
- 2½ cup Wholemeal flour + more for dusting
- ½ cup Butter
- ¾ cup Brown sugar
- 1 Egg
- 1 tsp Baking powder
- ½ cup Orange juice
- 1 tsp Orange zest finely grated
- ⅛ tsp Salt
- Vanilla
Instructions
- Using a handheld or stand mixer, beat the butter and sugar together on high speed until smooth and creamy.
- Beat in the egg and vanilla extract on high speed until combined.
- Add the orange juice and orange zest then mix again.
- In a separate bowl, mix the flour, baking powder and salt together.
- Mix the liquid ingredients with the flour mix and mix slowly to combine thoroughly to form a ball.
- Preheat oven to 200°C.Turn the dough out onto a lightly floured surface and roll with a regular rolling pin.
- Firmly press the embossed rolling pin into the already-rolled dough. Use long stroke to preserve the design.
- Once overall design is created, use cookie cutter to cut out desired shape.
- Place the biscuits on a baking sheet lined with parchment paper.
- Bake in oven for 20-30 minutes or until edges of the cookie are slightly darker. Leave to cool.
- Serve and enjoy!
