Yummy Light Kahk Stuffed with Walnuts (Eid Cookies) (Snowball Cookies)
Feast is never complete for me without enjoying kahk with cappuccino right after breakfast. Those cookies melting in the mouth make the best start to the day. I prepared a lighter version with healthy ingredients and only 84Kcal/ cookie, so I don’t have to feel guilty about it.

Materials
Kahk dough
- 1 cup Wholemeal flour
- 1 cup Oat flour
- ½ cup Corn starch
- ½ cup Ghee
- 1 tsp Yeast
- 1 tsp Honey
- 3 tbsp Warm Water
- ½ tsp Cinnamon
- ¼ tsp Cloves
- Vanilla
- Salt
Filling
- ¼ cup Walnuts chopped
Garnish
- ¼ cup Fructose sugar
Instructions
Kahk
- In a saucepan, heat the ghee until almost boiling.
- Meanwhile, In a small bowl mix honey with the warm water. Then stir in the yeast.
- Add the flour, corn starch, cinnamon, cloves and salt into a bowl.
- Add the ghee to the dry ingredients bowl and knead by hand until smooth. Then add in the yeast mix, vanilla and knead again till there are no clumps.
- Preheat oven to 180°C.Using a kahk mould, add a little of dough. Then add a piece of chopped walnuts. Press on top more dough. And voila, your cookie is ready.
- Place the cookies on a baking sheet.
- Bake for 15 minutes, or until golden.
Garnish
- To prepare the powdered sugar, pour the fructose sugar into a blender. Blend the sugar until it is fluffy powdered sugar.
Assembling
- Let the cookies cool. Dust with generous amount of powdered sugar before serving.
