Healthy, Easy and Quick French Cherry Clafoutis
With the start of the cherry season, nothing beats enjoying a piece of clafoutis prepared with fresh cherries. Clafoutis <klaa-foo-tee> is a French custard like dessert, that is irresistable.
I prepared a healthier version with few simple swaps. Clafoutis can be served warm at room temperature or cold. In my opinion, Clafoutis when served cold is the ultimate summer dessert.

- 1 cup Skimmed milk
- 3 Eggs
- 1/2 cup Fructose sugar
- Vanilla Extract
- 1/2 cup Wholemeal flour
- Powdered fructose sugar for dusting
- 1 tbsp Butter
- 200 g Fresh cherries pitted
Instructions
- Preheat oven to 200C.Prepare your ingredients.
- Grease a glass baking dish, and scatter them the pitted cherries over the bottom of the dish, covering it entirely in a single layer.
- In a blender, add the eggs, milk, butter, sugar and vanilla.
- Blend until smooth.
- Add the flour into the blender and mix again.
- Pour the batter slowly over the cherries.
- Bake in the preheated oven for about 30 minutes or until the clafoutis is nicely golden and well set.
- Sprinkle with powdered sugar just before serving. Enjoy it warm or cold.
