Heart-Healthy Mexican Quinoa Salad
This tasty quinoa salad is loaded with all the goodies. I used the protein rich quinoa and kidney beans, healthy fat avocado and the nutritious veggies. The final Mexican touch of jalapenos and spices provided the prefect complement to this nutritious salad.
Heart Healthy Mexican Quinoa Salad

Materials
- 1 cup Cooked Quinoa
- 1 Large Avocado chopped
- 1 Large Tomato chopped
- 1 Large Onion chopped
- ½ cup Red Kidney Beans
- ½ cup Sweet Yellow Corn
- ½ cup Cilantro chopped
- 5 Pickled Jalapeno Rings
Salad Dressing
- 3 tbsp Olive Oil
- 1 tbsp Lime Juice
- Salt
- Pepper
- Cumin
Instructions
- Cook the quinoa as described.
Salad Dressing
- Whisk the oil and lime juice rapidly, till they are mixed together. Then stir in the salt, pepper and cumin. Set aside.
Assembling the Salad
- In a large bowl, combine all the ingredients.
- Drizzle with the dressing and toss.
