Middle Eastern Tahini Quinoa Stuffed Veggies
These Middle Eastern stuffed veggies are the ultimate comfort food. Just using simple ingredients, you can prepare a hearty one-pot meal that is quite delicious. As a healthy alternative, I used quinoa instead of rice in preparation. The combination of veggies, quinoa, olives, tomatoes and tahini will just blow your mind. The Tahini gives the extra kick that takes the dish into the next level.
Middle Eastern Tahini Quinoa Stuffed Veggies

Equipment
- Stove Top
Materials
- 1 kg Assorted veggies (eggplants, tomatoes, pepper, zucchini) hollowed out
- 3 Tomatoes crushed
Filling
- 2 cup Cooked quinoa
- 10 Olives sliced
- 1 Tomato diced
Tahini Sauce
- ⅓ cup Tahini
- 2 tbsp Vinegar
- 1 tbsp Lime juice
- 3 tbsp water
- Salt
- Pepper
Instructions
- Prepare your ingredients.Start by preparing the tahini sauce by combining all ingredients. If it is too thick, add more water as needed.
- To prepare the filling, add ¾ of the tahini sauce in a bowl. Then add the quinoa, olives and tomato. Mix well.
- Using your fingers or a small spoon start filling the hollow veggies.
- In a pot, add the stuffed veggies upright. Prepare the sauce by mixing the crushed tomatoes with the remaining ¼ of the tahini sauce. Add the mixture onto the pot.
- Cook until done.Serve and enjoy.
